We can’t say it enough – the best way to be more eco-friendly with your food is to cook more. However, it’s a reality that for many people the busy work week simply makes it impossible to cook a fresh meal every night of the week. We’re all over-scheduled and over-stressed. Solution? Pick one day of the week and cook in bulk for the upcoming week. We like Sundays, but you can choose whatever day you like. Cook four-to-five full meals using fresh ingredients. Then just pack them away to reheat each night. After a few weeks (and especially if you involve the family in food preparation), the entire activity won’t take more than a few hours.
